White Bean & Lemon Spread


1 tbsp extra virgin olive oil
1/2 cup white onion, finely chopped
4 cloves garlic, minced
1-1/2 tsp ground cumin
1 tsp fresh chopped oregano
1-1/4 cups cooked white beans (recommended: Great Northern Beans)
1/4 cup fresh lemon juice
1 chipotle pepper in adobo sauce
1/4 cup sour cream
1/4 cup chopped cilantro
1 tsp salt


Pour the olive oil into a sauce pan. Add onion, garlic, cumin and oregano. Cook on medium heat, stirring frequently, for 3 to 5 minutes.
Pour this cooked mixture into a food processor and add the remaining ingredients. Puree until smooth.
Cool to room temperature. Store covered in the refrigerator.
